Indian Vegetarian Cooking From An American Kitchen
This simple salad is a great accompaniment to any spicy rice dish. For best results, use salad or beefsteak tomatoes and Kirby cucumbers.
Prep Time: 15 minutes Serves: 4
1 1/2 c. low-fat plain yogurt
1/2 tsp. salt, or to taste
1–2 green jalapenos, stemmed and minced
1 large salad tomato, cut into 1/2 inch dice
2 Kirby cucumbers (or 1/2 English cucumber), peeled and finely chopped
2 Tbsp. chopped fresh cilantro
In a bowl, whisk the yogurt, salt, and jalapenos. Before serving, stir in tomatoes and cucumbers. Garnish with cilantro and serve.

v Red tomatoes are best. Packed with the antioxidant lycopene, tomatoes help decrease the risk of many cancers and coronary heart disease. Look for fruits that are deep red, well shaped, and smooth skinned.
v Cucumbers are high in water content, and are a good source of vitamins C and A and mineralssuch as silica, potassium and magnesium. Look for cucumbers that are firm, bright medium to dark green, avoid those that are wrinkled at the tips.
v Yogurt is a cancer fighter, an immunity booster (because of the beneficial bacteria it contains), and a bone builder (calcium). It is rich in protein, which helps you stay fuller longer and keeps blood sugar levels stable.
